Coconut Cookies
Ingredients
- 300g plain flour
- 150g shredded unsweetened coconut
- 200g Organic Coconut Sugar
- 110g unsalted butter, room temperature
- 1 egg
- 1/2 tsp baking soda
- 1/4 tsp of salt
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 180°C/350°F.
- Sift together the flour, baking soda and salt. Finely ground the coconut sugar in a grinder.
- Well blend the butter and coconut sugar, then mix in the egg and vanilla extract.
- Add the flour mixture in 4 increments until well combined.
- Stir in the coconut.
- Using your hand to make dough ball, lightly press down on each dough ball to slightly flatten.
- Bake for 8-10 minutes until golden brown. Time may vary due to various ovens.
