Coconut Cookies

Ingredients

  • 300g plain flour
  • 150g shredded unsweetened coconut
  • 200g Organic Coconut Sugar
  • 110g unsalted butter, room temperature
  • 1 egg
  • 1/2 tsp baking soda
  • 1/4 tsp of salt
  • 1/2 tsp vanilla extract

Instructions

  • Preheat the oven to 180°C/350°F.
  • Sift together the flour, baking soda and salt. Finely ground the coconut sugar in a grinder.
  • Well blend the butter and coconut sugar, then mix in the egg and vanilla extract.
  • Add the flour mixture in 4 increments until well combined.
  • Stir in the coconut.
  • Using your hand to make dough ball, lightly press down on each dough ball to slightly flatten.
  • Bake for 8-10 minutes until golden brown. Time may vary due to various ovens.
