Coconut Sugar Cupcakes

Ingredients

  • 450 g plain flour
  • 450g Organic Coconut Sugar
  • 350g unsalted butter, softened
  • 2 eggs
  • 2 & 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 & 1/2 tsp vanilla extract

Instructions

  • Mix all ingredients in a bowl.
  • Pour into cupcake liners and bake at 180°C/350°F for 18-20 minutes until golden and firm to the touch.
  • For plain buttercream, beat 200g butter until soft, then beat in 200g icing sugar. Squeeze on top of cupcake with cream bag.
