Coconut Sugar Cupcakes
Ingredients
- 450 g plain flour
- 450g Organic Coconut Sugar
- 350g unsalted butter, softened
- 2 eggs
- 2 & 1/2 tsp baking powder
- 1/2 tsp salt
- 1 & 1/2 tsp vanilla extract
Instructions
- Mix all ingredients in a bowl.
- Pour into cupcake liners and bake at 180°C/350°F for 18-20 minutes until golden and firm to the touch.
- For plain buttercream, beat 200g butter until soft, then beat in 200g icing sugar. Squeeze on top of cupcake with cream bag.
